Festive Margarita Punch

A fantastic punch for entertaining, especially when the mood calls for casual fun. Elaine Trujillo’s brother-in-law, Ernie Renda, was born in Italy and raised in New Jersey. He spent some time in Texas, which is where he perfected this margarita recipe. For a stunning presentation, garnish the pitcher with citrus slices and fresh mint sprigs.

Makes 14 servings
12-ounce (360 ml) can limeade, plus 3 cans of water (do not follow the can instructions for the water amount)
3 cups (750 ml) tequila, preferably Cuervo Gold
1 cup (250 ml) Cointreau
1/3 cup (90 ml) fresh orange juice (preferably from Valencia oranges)
2 to 3 tablespoons fresh lime juice, or to taste
Ice

In a very large pitcher mix all of the ingredients except the ice. Adjust the flavor, and then add ice and any garnishes to the pitcher. Serve cold.

Palmatini
This pomegranate twist on a martini is as tasty as it is beautiful. Pomegranate seeds make the perfect garnish.

Makes 1 serving
Ice
2 ounces (1/4 cup, 60 ml) vodka
1 tablespoon Cointreau, or to taste
1 tablespoon pomegranate liquor, such as Pama
2 tablespoons Pom Wonderful 100% Pomegranate Juice
1 tablespoon fresh lime juice, or to taste

Fill a cocktail shaker with ice. Add all of the remaining ingredients and shake well. Strain into a chilled martini glass and serve.
