Roasted Red Bell Pepper and Feta Dip

This is probably one of the easiest and tastiest dips you will ever make. I use three cheeses to achieve a tangy yet creamy outcome. See below for suggestions for dipping choices and their calorie counts.

 Makes about 3/4 cup (180 ml)
¼ cup (40g) reduced-fat feta cheese
¼ cup (50 g) part-skim ricotta cheese
3 tablespoons reduced-fat cream cheese
½ cup (90 g) jarred roasted red bell peppers, coarsely chopped
Salt and freshly ground pepper, to taste

Place all of the ingredients in the bowl of a food processor and process until fairly smooth, scraping down the sides of the bowl as necessary. Adjust the seasoning, transfer to a serving bowl, cover, and refrigerate until ready to use.

Spinach Feta Dill Dip

A wonderfully healthy dip that marries well with whole wheat crackers, baked whole wheat flat bread, or veggies. The spinach and dill give it a bright green color, while the cheeses add flavor and creaminess. The full fat version of this dip clocks in at 105 calories and 10 grams of fat per serving. Makes about 1 cup (250 ml)
1/3 cup (65 g) tightly packed chopped cooked spinach, well drained
2 tablespoons sliced scallions
3 tablespoons chopped fresh dill
1 tablespoon nonfat mayonnaise
2 tablespoons nonfat sour cream
3 tablespoons reduced-free cream cheese
1/3 cup (60 g) reduced-fat feta cheese
1 teaspoon Dijon mustard
Salt and freshly ground pepper, to taste

 Combine all of the ingredients in the bowl of a food processor and process until smooth, or to desired consistency, scraping down the sides of the bowl as needed. Adjust the seasoning, transfer to a serving bowl, cover, and refrigerate if not serving promptly.
